White Pumpkin Halwa

White Pumpkin Halwa – easy & delicious sweet for your little ones. White Pumpkin is called as one of the most “Satvik” foods or “Shresht” vegetables among all as per Ayurveda. It has a lot of healing properties, makes our body alkaline. So why not enjoy this super food as a yummy dessert during diwali.

Ingredients
– 1 cup grated ash gourd
– 3 tbps ghee
– 1 tbps Early Foods Dry Fruit Powder for a nutty crunchy texture
– 10-15 cashews
– 5-10 raisins
– ¼ cup water
– ½ tsp cardamom powder
– Few strands of saffron (for color)
– ½ cup jaggery

Method of Preparation

1. Wash and peel the ash gourd. De-seed and cut into long slices
2. Grate the ash gourd using a grater/shredder. Keep aside
3. In a kadhai, heat ghee. Fry cashews till they become golden brown & raisins till they swell
4. Remove from kadhai & keep aside
5. In the same kadhai (with the leftover ghee) add the ash gourd and saute.
6. Let the ash gourd cook on low-medium flame
7. If the ash gourd becomes too dry in the process, add water & continue cooking. It takes about 15-20 minutes for the ash gourd to cook completely
8. Next add the jaggery powder & blend everything well
9. Mix dry fruit powder, cardamom powder & saffron strands. Continue cooking till the mixture thickens and the ash gourd gets a glossy texture
10. Once the mixture starts thickening, add some ghee
11. Add the fried cashews & raisins. Stir well for 2 minutes more
12. Remove from the stove & let it cool a bit
Serve the White Pumkin Halwa warm. Enjoy!

Tips:
1. Best when cooked on a medium to low flame in a cast iron kadai
2. This halwa can be refrigerated for upto 3 days
