Red Rice Dumplings

A fun-looking recipe to introduce red rice for kids. It is not just higher in fibre but has a lot of anti-oxidants called anthocyanins compared to the regular white rice we eat. So it’s great to use them at least once in a while in a few innovative recipes like these.

Its fancy name is dumplings, but its traditional name is “kozhukattai”, a steamed healthy meal made in various fun shapes, prepared within 20 minutes.

Ingredients:

  1. Soaked Red Rice – 1 Cup
  2. Urad Dal – 1 Tsp
  3. Salt to taste
  4. Red Chilli – 1
  5. Hing (optional)
  6. Mustard Seeds – 1/2 Tsp
  7. Oil for seasoning
  8. Chopped onion

Method:

  1. Grind the rice with water to make a fine paste. It can be a little runny.
  2. Add all the ingredients for seasoning, saute for 2 mins and now add the red rice batter to cook for 5 mins
  3. The batter becomes a thick dough.
  4. Once slightly cooled, roll them into fun shapes for kids
  5. Steam these dumplings for 15 minutes
