Kodo Millet Vegetable Pulao

Kodo Millet

A yummy nutritious Sunday Lunch or Early Dinner recipe for all – Kodo Millet Vegetable Pulao.

Ditch the regular basmati rice, and try the nutritious grains of Kodo for a change. It unique taste & texture is so rustic that bring back the memories of your grandma’s yummy cooking.

Ingredients:

– 1 cup Kodo Millet

– 1 cup Chopped vegetables

– ¼ cup Chopped Onion

– 2 tbsp Ginger- garlic paste

– 3 tbsp Chopped mint & coriander leaves

– 2 Green Cardamom

– 1 inch Cinnamon

– 2 cloves

– 1 tbsp salt

– 2 Slit green chilli

– 1 tbsp ghee/cold pressed oil

Pre-Preparation:

  1. Soak Kodo Millet grains for at least 4-6 hours with 2 cups of water.

Method Of Preparation:

1.Heat oil/ghee in a pan

2.Add cloves, cinnamon & cardamom. Fry for a minute

3.Add chopped onions and fry for 3 minutes

4.Add ginger garlic paste. Let it cook till the raw smell disappears

5.Add chopped vegetables, coriander & mint leaves. Mix well

6.Add salt & 1 cup of water

7.When water starts to boil, add the rinsed & soaked millet along with the water it was soaked in

8.Cook on medium flame for 20 minutes Enjoy hot Kodo Millet pulao with raita
