Sprouted Ragi Muffins

Sprouted Ragi/Nachni/Finger millet is 10x richer in calcium than rice or wheat, so it is one ingredient that you want to include in your child’s diet regulary as possible.

Ingredients:
– 1/2 cup whole wheat flour
– 1/2 cup sprouted Ragi flour (You can use the Sprouted Ragi porridge mix from Early Foods)
– 1 table spoon dry fruits powder (You can use the dry fruit powder from Early Foods too)
– 1 tablespoon flax seeds powder
– â…” cup Jaggery powder
– ½ cup unsalted butter (or use any cold pressed oil)
– ½ cup almond milk (or A2 cow milk, great for kids)
– 2 tsp curd
– ½ vinegar
– A pinch of salt

Method:

1. Preheat oven to 400 degrees F (200 degrees C). Grease the muffin cups. While its getting preheated work on the following steps

2. First take flax seeds powder, mix with 3 tablespoon water without lumps, and keep aside for 15 minutes.

3. Take whole wheat flour, dry fruits powder, finger Millet, jaggery powder in a bowl.

4. Mix all wet ingredients flax seeds mix, butter/oil yogurt, vinegar and milk together in a bowl until smooth batter.

5. Now mix wet and dry ingredients together. Now fill the prepared muffin cups with batter.

6. Bake in preheated oven until tops are golden brown and an inserted toothpick comes out clean, about 15 minutes.

Ta Da, healthy muffins ready in 30 mins 🙂 What a yummy snack for kids.
