Amla Soup

Amla Soup
Winter/Flu recipes – Piping hot Amla soup helps not only kids but the enitre family fight the flu monsters better.
The humble amla – packed with nutrients and vitamins that help build immunity and also help overcome cold & cough.
For the soup:
  • 1 tsp cumin seeds (jeera)
  • 1 tsp coriander seeds (dhaniya seeds sabut)
  • 2-3 black peppercorns
  • 4 large amla (or you can use 2 tbsps of Early Foods Amla Powder)\
  • 3/4  tsp ginger paste or 1 inch ginger finely chopped
  • ½ tsp homemade sambhar powder (optional)
  • 3/4 tsp turmeric powder
  • 1 tsp salt
  • Water
For seasoning:
  • 2 tsps ghee/clarified butter
  • 1 tsp mustard seeds
  • 1 tsp urad dal
  • Few curry leaves
  • 1 pinch hing/asafoetida
  • Finely chopped Coriander leaves
1.In a kadhai dry roast roast jeera, dhaniya seeds, peppercorns for a few seconds & keep aside
2.Wash amla and cut into small pieces.Deseed
3.In a mixer jar, add amla (or powder), ginger, roasted spices and a little water. Blend to a smooth paste
4.In a large kadhai, add the paste along with 2 cups of water
5. Add salt, turmeric powder, sambhar powder(if using) mix well and boil. Add water for a dilute & runny consistency
6. Simmer on low flame for 2-3 minutes more. Remove & set aside
For the seasoning:
1. Heat ghee in a pan, add mustard seeds, urad dal
2.When the dal turns golden brown & the seeds splutter, add curry leaves & hing
3.Pour this seasoning into the rasam and mix
4.Garnish with finely chopped coriander leaves and serve warm.
