Little Millet Curd Rice

Little Millet is also called as Sama Rice/Samai or Kutki in different parts of the country. It is a mountain crop, needs less rainfall, and is naturally resistant to pests hence needed less pesticides to be grown.

This millet has a very rich Vitamin B profile, rich in fiber, fat compared to just polished white rice.

Ingredients

-Little Millet – 1 Cup

-Curd – 1 Cup

-Pomegranate – 1/4th cup

-Milk – 1/4th cup

-Coriander Leaf – 2 strings

-Grated Carrot – 2 tbsp

-Mustard Seeds- ½ tsp

-Urad dal – 1 tsp

-Salt – 1 tsp

-Oil – 1 tsp

-Curry Leaf – 1 string

-Grated Ginger – 1 tsp

-Slit green chilli – 1

Method Of Preparation

-Soak little millet for 3 hours

-Cook the soaked little millet for 20 mins in an open pot ( just like rice)

-Once cooked, allow it to cool completely

-Add curd & milk to the cooked millet and mix well.

-For seasoning, in a kadhai add oil.

-Once hot, add mustard seeds, urad dal, grated ginger, chilli, curry leaves

-Roast well on medium flame

-Add this seasoning to the curd millet rice. Add salt and mix well.

-For garnishing, add pomegranate, grated carrots and coriander leaves.

The recipe shows the curd rice with traditional seasoning of mustard seeds and spices like ginger too that makes it super yummy.

If you want to feed them to your younger babies, make the seasoning less spicier.
