Proso Millet Dosa – Proso Millet also called as Baragu, Chena, Barri in other Indian regional languages is very high in Protein. You can make a simple batter with udad dal and then make crispy dosas for your little ones.

Method:
1. Proso Millet 3 cups
2. Urad Dal 1 cup
3. Poha/Cooked Rice Handful
Process to ferment the batter:
Wash all the grains, and soak with just enough water for 4-5 hours. Blend them all together for 2-3 minutes in a mixer to get a smooth paste. Pour the batter into a big bowl and cover it. Leave it to ferment for 8-10 hours in a warm space. Once fermented the batter would be double the size with a lot of air bubbles.
Use the batter to make soft Proso Millet Dosa
Note: Use up the batter within 2 days max, else it can get sour.
Age: 7 months and up can eat the soft dosas with plain dal/sambhar
