Black Rice Idlis for kids. Black rice is grown in the North east, Orissa and Jharkhand. So this could a be an interesting recipe if you stay in this area for your baby.
It’s the only rice to have very high antioxidants called anthocyanins.
This is mostly found in dark or purple colour vegetables only.
Method:
1. Black rice 3 cups
2. Urad dal 1 cup
3. Poha or white cooked rice 1 handful
Wash the grains, soak them for 5 hours. Grind them all in a mixer and allow to ferment for 8 to 10 hours. You will be blown away by the rich colour it has 🙂
Once fermented, you ll see small air bubbles in the batter. Pour into small idli moulds. Steam for 10 minutes and serve with chutney or Sambhar.
Notes:
1. You can use the same batter for making dosa too. It looks like dark chocolate dosas 🙂
2. Idlis need more time to cook than normal white rice idlis. Almost double the time.
