How to make Little Millet Pulao with Mixed Sprouts
1. Take a variety of whole pulses (Chole,Rajma, Moong, Lobiya etc.). Soak in water for 12 hours. The drain the water and keep it in a closed box at room temperature for another 12 hours.
2. Next day you ll have sprouts emerging from these pulses. Sprouts become richer in protein, reduced antinutrients, easier to digest for kids
3. Soak 1cup Little Millet for 4-6 hours in 2 cups of water. Use the same water to cook it, since you dont want to lose the water soluble minerals in millets
4. Take a broad pan, add oil, spices like pepper, nutmeg, cinnamon, bay leaves, cardamom and give it roast for a min. These are just for an amazing flavour. It does not make it spicy for the kid
5. Now add chopped tomato & sprouted pulses and cook for 10 minutes on a medium flame with little water.
6. Add salt, turmeric, a green chilli (optional) and mix
7. Now add the soaked millet with its water and cook on a low flame for 20 mins. (My preferred way of cooking)
8. You can also use a pressure cooker to do this and cook for 3 whistles.
Serve with cucumber raita, either grate the cucumber or make them into long sticks as per your child’s preference. Serve warm
Always take the extra effort to make food fun for the kid. He/she will remember the food for its memories and not just its nutrition or taste.
